Ingredients

Wholemeal tortilla

2 small, (2x40g), wholegrain

Herb and garlic tomato paste

2 tbs

Reduced-fat 15% cheddar cheese

45 g, grated

Red onion

¼ small, thinly sliced

Zucchini

1 large, thinly sliced

Goat's cheese

50 g, crumbled

Dried oregano

1 tsp

Fresh basil

2 tbs

Instructions

  1. Preheat oven to 220°C or 200°C fan-forced. Spread tomato paste evenly over tortillas. Top each with grated cheese, sliced onion, zucchini, goat’s cheese and oregano.
  2. Place pizzas on a large baking tray and bake for 10–12 minutes or until bases are crisp and cheese is golden and melted. Cut into quarters and serve sprinkled with basil.

Notes

SERVING SUGGESTION: Salad of mixed lettuce leaves, grated carrot, grated cucumber, grated beetroot, grated zucchini and halved cherry tomatoes, drizzled with 1/3 cup (80ml) low-fat dressing.
