Ingredients

extra lean beef mince

500 g

onion

1 medium, finely chopped

garlic

1 clove(s), crushed

canned diced tomatoes

400 g, (1 x 400g can)

tomato passata

450 g, (1 x 450g jar)

tomato paste

1½ tbs

dried herbs

1 tsp, mixed variety

beef stock cube

1 individual

zucchini

3 medium, spiralised

fresh basil

1 tbs, small leaves, to serve

oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick saucepan with oil and heat over medium heat. Add mince, onion and garlic and cook for 5 minutes or until mince is browned and the onions have softened.
  2. Add canned tomato, passata, tomato paste and mixed herbs to the pan, stir well and bring to the boil. Crumble in stock cube and stir again. Reduce heat and simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened.
  3. When sauce is nearly ready, lightly spray a large frying pan with oil and add zucchini. Cook over medium heat for 1-2 minutes or until slightly softened. Season to taste, divide among plates and serve topped with sauce and garnished with basil.

Notes

Variation: Add 2 tbs dry white wine after browning mince and onion in Step 1. Cook for 1 minute, or until evaporated.
