Wendy's sweet potato and wasabi fritters

Ingredients
Orange sweet potato (kumara)
400 g, grated
Garlic
2 clove(s), crushed
Egg(s)
4 medium, lightly beaten
Plain flour
⅔ cup(s), (100g)
Panko breadcrumbs
100 g
Wasabi paste
1 tbs
Low-fat mayonnaise
2 tbs
99% fat-free, plain or natural yoghurt, unsweetened
⅓ cup(s), (80g)
Green shallot(s)
2 individual, thinly sliced
Oil spray
4 x 3 second spray(s)

Combine sweet potato, garlic, egg, flour, breadcrumbs and half the wasabi paste in a large bowl. Season with salt and pepper.

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Spoon three ¼-cup amounts of batter into pan to make 3 fritters. Cook for 3-4 minutes each side or until golden and cooked through. Repeat to make 12 fritters.

Meanwhile, combine mayonnaise, yoghurt and remaining wasabi in a small bowl. Serve fritters with wasabi mayonnaise, and garnished with shallot and black pepper.
