Ingredients

Egg(s)

1 medium

White self-raising flour

28 g

Natural sweetener

1½ tbs

Unsweetened almond milk

1½ tbs

Ground cinnamon

¼ tsp, plus extra for dusting

Baking powder

½ tsp

Banana(s)

1 medium, mashed, plus extra slices to serve

Sugar-free maple syrup

1½ tbs

Instructions

  1. Whisk egg, flour, sweetener, almond milk, cinnamon and baking powder in a medium bowl until smooth and combined. Add mashed banana and whisk until combined. Pour mixture into a microwave silicone omelette maker.
  2. Microwave on high (100%) in 30 second bursts, for a total of 2 minutes, or until just cooked through.
  3. Place extra banana slices over half of pancake. Carefully enclose the omelette maker from the opposite side to fold pancake over. Open omelette maker and gently slide banana bread onto a serving plate using a rubber spatula. Dust with extra cinnamon and drizzle with maple syrup to serve.
