Refreshing and fun, this unconventional salad combines the flavours of juicy fresh watermelon with tasty feta and crunchy walnuts. This one is sure to impress!
Ingredients
  • Watermelon
    450 g, seedless variety
  • reduced fat feta cheese
    100 g, crumbled
  • fresh mint
    2 tbs, finely chopped
  • walnuts
    ⅓ cup(s), (35g), finely chopped
  • olive oil
    2 tsp
  • red onion
    20 g, (1tbs, finely chopped)
Instructions
  1. Cut watermelon into ten 1cm-thick wedges. Arrange on a serving platter.
  2. Combine feta, mint, walnuts, oil and onion in a small bowl. Sprinkle feta mixture over watermelon. Season with pepper to serve.
Notes
TIP: You can use unsalted pistachio kernels instead of walnuts.
