Watermelon with walnut and feta salsa

Refreshing and fun, this unconventional salad combines the flavours of juicy fresh watermelon with tasty feta and crunchy walnuts. This one is sure to impress!


Ingredients
Watermelon
450 g, seedless variety
Reduced fat feta cheese
100 g, crumbled
Fresh mint
2 tbs, finely chopped
Walnuts
⅓ cup(s), (35g), finely chopped
Olive oil
2 tsp
Red onion
20 g, (1tbs, finely chopped)
Instructions

Cut watermelon into ten 1cm-thick wedges. Arrange on a serving platter.

Combine feta, mint, walnuts, oil and onion in a small bowl. Sprinkle feta mixture over watermelon. Season with pepper to serve.
