If you have watermelon and diet ginger beer, then you have all that’s needed for a red, fizzy punch. Fun and uplifting, your guests will never know how simple it is to make!

Ingredients

Watermelon

1200 g, (1.2kg) seedless

Non-alcoholic diet ginger beer

375 ml, (1x375ml can)

Instructions

Place 1kg watermelon flesh in a large jug (reserve remaining to serve). Using a hand-held blender, blend until smooth. Strain into a large jug. Stir in ginger beer.

Finely chop the reserved flesh and add to watermelon jug with ice cubes to serve.
