Warm cumin-scented olives

For a tasty snack, simply serve olives mixed with garlic, olive oil and cumin for a surprisingly fresh flavour


Ingredients
Ground cumin
1 tsp
Black olives, drained
160 g, (kalamata)
Olive oil
1 tbs, extra virgin
Garlic
2 clove(s), crushed
Fresh lemon rind
2 tsp, (3 strips)
Instructions

Preheat oven to 160°C or 140°C fan-forced. Place cumin seeds in a small non-stick frying pan over medium heat. Cook, stirring, for 2–3 minutes or until fragrant.

Place olives in a 2-cup (500ml) capacity baking dish. Stir in oil, garlic cloves, lemon rind and roasted cumin seeds. Bake for 10 minutes or until warm. Serve.
