Warm chicken, tomato and basil pasta salad

This moorish pasta dish can be whipped up in no time. The wholemeal pasta gives this dish a pleasant, nutty taste.

Ingredients

Skinless chicken breast

180 g, (200g fat trimmed)

Wholemeal pasta, dry

100 g

Lemon juice

1 tbs

Grapeseed oil

1 tbs

Garlic

1 clove(s), crushed

Cherry tomatoes

100 g, (or grape), halved

Fresh basil

½ cup(s)

Fresh dill

1 tbs, chopped, plus extra sprigs to garnish

Instructions

  1. Place chicken in a small saucepan and cover with cold water. Bring to the boil. Reduce heat to medium-low and simmer for 6–8 minutes. Remove pan from heat. Cover and set aside for 10 minutes or until chicken is cooked through. Drain. Allow to cool before shredding chicken with a fork.
  2. Meanwhile, cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain.
  3. Whisk juice, oil and garlic in a large bowl. Add pasta, chicken, tomatoes, basil and chopped dill. Season with salt and freshly ground black pepper. Toss to combine. Serve garnished with extra dill.

Notes

TIP: Poaching is a great low-fat way to cook chicken and fish. For extra flavour, try adding fresh herbs or spices to the poaching liquid or use stock instead of water.
