Freshly baked rolls are a must for this taste-winning combination of prawns, lettuce, avocado and mayo.

Ingredients

Multigrain bread roll

80 g, (4 x 20g bake-at-home)

Butter lettuce

½ cup(s), shredded, (4 individual leaves)

Avocado

½ small, mashed

Cooked peeled prawns

120 g

Low-fat mayonnaise

2 tbs

Celery

2 stick(s), (stalks)

Carrot(s)

1 small, peeled and cut into batons

Cucumber

1 medium, cut in to batons

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Place bread on a baking tray. Bake following packet instructions or until golden.
  2. Split rolls and fill with lettuce, avocado, prawns and mayonnaise. Season with salt and freshly ground black pepper. Serve rolls with vegetable batons.

Notes

You can use canned peeled prawns (drained) instead of fresh prawns.
