Add a dollop of tasty homemade pesto to a plate of pasta or as a topping for meat or fish. It's an instant dinner winner!

Ingredients

walnuts

1 cup(s)

fresh flat-leaf parsley

1 cup(s)

baby capers, rinsed, drained

1 tsp

Colomba (NZ), Anchovy Fillets

20 g

fresh lemon rind

1 tbs

lemon juice

1 tbs

garlic

1 clove(s)

olive oil

2 tsp

Instructions

  1. Place walnuts, parsley, capers, anchovy fillets, grated lemon rind, lemon juice and garlic in a food processor.
  2. Process until roughly chopped. With the motor running, gradually add olive oil and process until almost smooth. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.

Notes

TIP: Great with osso buco or grilled chicken or fish.
