Waffles with caramelised pineapple

Caramelised maple syrup pineapple is super quick to make and can be used to top waffles for brekkie, or eaten on its own as a tasty simple dessert.
Reduced fat oil spread
700 g, peeled, cored, finely chopped
No-fat, no added sugar vanilla yoghurt
Shredded or desiccated coconut
1 tbs, toasted
- Melt spread in a large non-stick frying pan over medium-high heat. Cook pineapple, stirring occasionally, for 3-4 minutes or until most of the liquid evaporates. Add maple syrup and cook, tossing, for 2 minutes or until light golden. Stir in lime juice and remove from heat.
- Toast waffles for 1 minute only (see notes).
- Divide waffles between plates and top with pineapple and yoghurt. Sprinkle with coconut.
TIP: Vary your toppings with other seasonal fruits. Keep an eye on waffles in a toaster – the time on a normal setting will probably burn them after more than a minute.
