Ingredients

Red onion

½ medium, thinly sliced

Red capsicum

½ medium, thinly sliced

Yellow capsicum

½ medium, thinly sliced

Mushrooms

60 g, button variety, sliced

Baby spinach leaves

½ cup(s), (10g)

Dried thyme

¼ tsp

Egg(s)

2 medium, lightly beaten

Oil spray

1 x 3 second spray(s)

Instructions

  1. Heat a small non-stick frying pan over medium heat. Add onions, capsicum, mushrooms and cook, stirring for 3-5 minutes or until tender, adding a splash of water as needed. Add spinach and thyme and cook, stirring for 20 seconds or until spinach wilts. Transfer vegetables to a bowl and set aside.
  2. Wipe pan clean. Away from heat, lightly spray pan with oil and heat over medium heat. Add eggs and cook for 30 seconds. Using a spatula, draw edges of omelette into the centre, allowing uncooked egg to run underneath. Continue doing this until omelette is nearly set. Top omelette with vegetable mixture. Fold omelette over and cook for 1-2 minutes or until heated through.

Notes

TIPS: Add 1 tbs parmesan cheese (contains dairy). Swap fresh capsicum for roasted capsicum (not in oil).
