Vegetable haloumi burgers in mini pitas
300 g, grated
1 medium, grated
Frozen corn kernels
50 g, thawed
150 g, chopped
2 slice(s), to make 70g fresh breadcrumbs
1 medium, lightly beaten
100 g, finely chopped
1 tbs, chopped
200 g, (4 x 50g mini pitas)
Mixed salad leaves
1 x 3 second spray(s)
- Preheat oven to 200°C. Lightly spray a large baking tray with oil.
- Combine carrot, zucchini, onion, corn, tofu, breadcrumbs, egg, cheese and coriander in a large bowl. Season with salt and pepper.
- Shape mixture into 8 patties and arrange on prepared tray. Bake for 20-25 minutes or until golden brown.
- Warm pita breads and split them open. Fill each with a pattie and salad leaves. Serve immediately.
