The ultimate fruit salad

The longer your leave the fruit and juice to macerate, the more flavoursome and sweeter your syrup will be.

Ingredients

Watermelon

300 g, chopped

fresh strawberries

250 g, halved

fresh blueberries

125 g

grapes

100 g, (red seedless) halved

fresh valencia orange

2 medium

caster sugar

1 tbs

Sorbet, all flavours

200 ml, mango variety

Instructions

  1. Combine the watermelon, strawberries, blueberries and grapes in a large bowl.
  2. Using a small sharp knife, segment 1 orange. Juice the remaining orange. Combine orange juice and sugar in a small bowl. Add the orange segments and juice mixture to the fruit salad. Gently toss to combine. Cover and place in the fridge for 3 hours or overnight for the flavours to develop and the fruit to soften slightly.
  3. Divide the fruit salad among serving bowls. Top with scoops of sorbet.

Notes

SERVING SUGGESTION: Add 1 tbs flaked almonds (toasted) in Step 3, to serve. VARIATION: Swap mango sorbet for lemon sorbet.
