Instructions

  1. Combine banana, egg whites and whole egg in a food processor or small smoothie blender, process until smooth.
  2. Heat a medium non-stick frying pan over medium heat. Pour mixture into pan to make three pancakes, leaving space between each one. Cook 20 seconds each side or until golden. Serve.
Notes
SERVING SUGGESTION: Fruits such as strawberries and banana. Sprinkle with cinnamon and top with 99% fat-free plain yoghurt (contains dairy). TIPS: These pancakes brown very quickly so keep a close eye on them. Swap banana for 1/3 cup pureed apple.
