- Combine banana, egg whites and whole egg in a food processor or small smoothie blender, process until smooth.
- Heat a medium non-stick frying pan over medium heat. Pour mixture into pan to make three pancakes, leaving space between each one. Cook 20 seconds each side or until golden. Serve.
SERVING SUGGESTION: Fruits such as strawberries and banana. Sprinkle with cinnamon and top with 99% fat-free plain yoghurt (contains dairy). TIPS: These pancakes brown very quickly so keep a close eye on them. Swap banana for 1/3 cup pureed apple.
