Turkey steaks with pear and blueberry relish
The tasty blueberry and balsamic relish added a sweet twist to this mid-week turkey steak dish.
½ small, finely chopped
2 medium, peeled, finely chopped
Ground all spice
Skinless turkey breast
500 g, lean, cut into thick escalopes
2 x 3 second spray(s)
- Lightly spray a small saucepan with oil and heat over medium heat. Cook onion, stirring, for 3-4 minutes or until soft.
- Add pears and cook, stirring, for 2 minutes. Add blueberries, vinegar, allspice and 2 tbs water and bring to the boil. Reduce heat to low and simmer, uncovered, for 5-7 minutes or until relish is thick.
- Meanwhile, season turkey with salt and pepper. Heat oil in a large non-stick frying pan over high heat. Cook turkey for 2-3 minutes each side or until cooked through. Serve turkey with pear and blueberry relish.
SERVING SUGGESTION: A medley of steamed baby carrots, broccoli and baby red-skinned potatoes.
