Turkey burritos

A shake of a burrito spice sachet is all that shredded turkey needs to give it a Mexican flavour that begs to be wrapped in a tortilla with salad then gobbled up!

1 medium, finely chopped

reduced-salt taco seasoning mix

canned diced tomatoes

Skinless turkey breast, baked or roasted

mixed salad leaves

  1. Lightly spray a large saucepan with oil and heat over medium-high heat. Cook onion, stirring, for 5 minutes or until softened. Add spice mix and cook, stirring, for 1 minute or until fragrant. Add tomatoes and ½ cup (125ml) water and bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 5 minutes or until sauce is thick. Stir in turkey.
  2. Heat tortillas following packet instructions. Place tortillas on a board and top each evenly with salad leaves and turkey mixture. Fold in base, then roll to enclose filling. Serve.


SERVING SUGGESTION: Green mixed leaf salad. If you like, spread tortillas with 1 tablespoon sour cream or sprinkle 1 tablespoon Bega So Extra Light 50% Reduced Fat Tasty Grated Cheese over turkey mixture before rolling. Serve with coriander sprigs or sliced pickled jalapeno chilli. TIP: Warm tortillas wrapped in foil in a preheated oven for 5 minutes or until warm to touch. Alternatively warm one at a time in a sandwich press for 30 seconds.
