Turkey, bean and cauliflower pilaf

For a hearty and healthy dinner you can’t go past this pilaf. With lean turkey pieces, the crunch of cauliflower and the fluffiness of the rice, a dish that ticks all the boxes can be on the table in just 20 minutes.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Skinless turkey breast

500 g, cut into 2cm pieces

Tikka masala paste

1 tbs

Cauliflower

2 cup(s), (300g) cut into small florets

Salt reduced chicken stock

½ cup(s), (125ml)

Microwave white rice

450 g, basmati

Frozen green beans, cooked without added fat

165 g

Fresh coriander

cup(s), chopped

Instructions

  1. Heat olive oil in a saucepan on medium-high. Cook onion for 4 minutes or until softened. Add turkey. Cook, stirring, for 2 minutes or until turkey is browned. Add tikka masala paste and cook, stirring, for 1 minute. Add cauliflower, and chicken stock. Cook, covered, for 5 minutes.
  2. Add rice and beans. Cook, covered, for 3 minutes or until turkey is cooked and liquid is absorbed. Stir in coriander.

Notes

SERVING SUGGESTION: Spinach leaves and lemon wedges, plus 1 tbs no-fat natural yoghurt.
