Tuna tagliatelle

Ingredients

Cherry tomatoes

500 g, halved

Egg pasta

300 g, tagliatelle

Garlic

2 clove(s), crushed

Chicken stock

½ cup(s), hot, (125ml)

Lite tuna canned in oil, drained

370 g, (2 x 185g cans)

Instructions

Preheat oven to 200°C or 180°C fan-forced. Place tomatoes cut side up on a baking tray lined with baking paper. Lightly spray with oil and season with salt and freshly ground black pepper. Bake for 15 minutes or until soft and cooked.

Meanwhile, cook pasta in a large pan of boiling salted water following packet instructions. Drain and return to pan.

Gently toss the tomatoes, garlic and stock through the hot pasta, fold in tuna flakes and serve.
