Tuna lentil nicoise
1 baby, leaves separated
Lentils, canned, rinsed, drained
1 400g can, (1x400g can brown lentils)
300 g, baby roma variety, quartered
1 medium, thinly sliced
Tuna, canned in springwater, drained
370 g, (2x185g cans) flaked
White wine vinegar
Whole grain mustard
1 clove(s), crushed
- Cook beans in a small saucepan ofboiling water for 2-3 minutes or until bright green and tender. Drain and refresh under cold water. Drain.
- Arrange cos on a serving plate. Top with beans, lentils, tomatoes, onion and tuna.
- Whisk oil, juice, vinegar, mustard, garlic and honey in a small bowl. Season with salt and pepper. Drizzle over salad to serve.
