Ingredients

Green string beans

200 g

Cos lettuce

1 baby, leaves separated

Lentils, canned, rinsed, drained

1 400g can, (1x400g can brown lentils)

Tomato(es)

300 g, baby roma variety, quartered

Red onion

1 medium, thinly sliced

Tuna, canned in springwater, drained

370 g, (2x185g cans) flaked

Olive oil

3 tsp

Lemon juice

1 tbs

White wine vinegar

3 tsp

Whole grain mustard

1 tsp

Garlic

1 clove(s), crushed

Honey

1 tsp

Instructions

  1. Cook beans in a small saucepan ofboiling water for 2-3 minutes or until bright green and tender. Drain and refresh under cold water. Drain.
  2. Arrange cos on a serving plate. Top with beans, lentils, tomatoes, onion and tuna.
  3. Whisk oil, juice, vinegar, mustard, garlic and honey in a small bowl. Season with salt and pepper. Drizzle over salad to serve.

Notes

TIP: You can use cherry or grape tomatoes instead of baby roma tomatoes. VARIATION: Add 2 hard-boiled eggs (quartered) with tuna in Step 2 or swap lentils for cannellini beans
