Whether it’s a light lunch or between-meal snack, this tuna topping is fresh, fast and full of flavour.

Ingredients

Tuna, canned in springwater, drained

60 g

Green shallot(s)

2 individual, trimmed, thinly sliced

Celery

½ individual, stalk, trimmed, thinly sliced

Capers, rinsed, drained

1 tsp, finely chopped

Fresh flat-leaf parsley

2 tsp, chopped

Lemon juice

2 tsp

Avocado

¼ small, thinly sliced

Cos lettuce

2 cup(s)

Soy and linseed bread

42 g, (1 thick slice)

Instructions

  1. Combine tuna, shallots, celery, capers, parsley and lemon juice in a medium bowl.
  2. Top the bread with avocado, lettuce and tuna mixture. Serve.
