A hint of tabasco turns up the heat on this sensational salad filled with mango, avo and prawns.

Ingredients

olive oil

2 tbs, extra virgin variety

lime juice

1½ tbs

tabasco sauce

¼ tsp

cos lettuce

1 cup(s), (2 leaves)

Prawn, school, cooked

400 g, peeled, tails intact

mango

1 large, thinly sliced

avocado

1 medium, finely chopped

lebanese cucumber

1 medium, halved lengthways, thinly sliced

red onion

¼ medium, thinly sliced

Instructions

  1. Combine oil, juice and Tabasco in a small bowl. Season dressing with salt and pepper.
  2. Arrange lettuce, prawns, mango, avocado, cucumber and onion on a serving platter. Drizzle with dressing to serve.

Notes

SERVING SUGGESTION: Sourdough bread. TIPS: You will need to buy 750g unpeeled medium prawns to get 400g peeled prawns. Store any leftovers in an airtight container in the fridge for up to 1 day. Keep dressing in a separate container.
