Trio of peas with bacon and leek
125 g, finely chopped
1 whole, pale section only, thinly sliced
Frozen green peas

Chicken stock cube
¼ individual, to make ¼ cup (60ml) liquid stock

- Heat the oil in a large saucepan or large, deep-sided frying pan over medium heat. Cook the bacon, stirring occasionally, for 4 minutes or until golden. Add the leek and cook, stirring often, for 3 minutes or until soft.
- Add the combined peas and liquid stock. Cook, covered, for 4 minutes or until the peas are just tender. Season with pepper. Stir in the mint.
