Sweet chilli tofu burger

This vegetarian protein burger contains magnesium, phosphorous and some essential vitamins making it the perfect 15 minute meal.

Ingredients

Silken tofu

250 g, firm variety

Sweet chilli sauce

2 tbs

Wholemeal bread roll

4 medium, (4 x 50g), split, toasted

Avocado

½ medium, mashed

Lebanese cucumber

1 medium, sliced

Carrot(s)

1 medium, grated

Baby spinach

75 g

Oil spray

1 x 3 second spray(s)

Instructions

  1. Pat tofu with paper towel to absorb excess moisture. Cut into 8 slices. Brush each slice with 1 tablespoon sweet chilli sauce.
  2. Preheat a chargrill or barbecue over medium-high heat. Lightly spray tofu with oil. Cook for 2 minutes each side or until lightly charred.
  3. Spread bread roll bases with avocado. Top with cucumber, carrot, tofu and baby spinach leaves.
  4. Drizzle each burger with remaining sweet chilli sauce. Sandwich with bread roll tops to serve.

Notes

Make sure you buy firm tofu as silken (sometimes called soft) tofu is too soft for grilling and is better in soups or making sauces and dips.
