Toasted rye with spicy avocado, salmon and snow pea shoots
Piled high with slices of succulent smoked salmon on a layer of creamy avocado, this gourmet sandwich is fresh and fabulous.
1 tbs, chopped
Dried chilli flakes
½ tsp, (optional)
Dark rye bread
1 medium, thinly sliced
20 g, trimmed
- Combine avocado, chives, juice and chilli in a small bowl. Mash with a fork until almost smooth. Season with salt and freshly ground black pepper.
- Toast bread. Spread toast with avocado mixture. Serve topped with cucumber, salmon and snow pea shoots.
SERVING SUGGESTION: Salad of baby spinach leaves and cherry tomatoes.TIP: You can use watercress instead of snow pea shoots.
