The addition of cottage cheese gives you a delicious creamy egg sandwich, perfect with the crunch of coleslaw on Turkish bread.
97% fat-free cottage cheese
1 individual, finely chopped
Coleslaw mix, without dressing
200 g, (2 cups)
350 g, sliced into 8 portions
- Place the eggs in a small saucepan and cover with water. Bring to the boil over high heat. Boil for 6 minutes. Set aside to cool. Drain and peel.
- Use a fork to mash the eggs in a bowl. Add the cottage cheese, spring onion and curry powder and combine.
- Divide the coleslaw mixture among the bread bases. Top with egg mixture and bread tops to serve.
