Ingredients

Brown sugar

½ tsp

Smoked paprika

½ tsp

Soy sauce

2 tbs

Plain tempeh

90 g, sliced

Wholegrain bread

4 slice(s), (4 x 35g)

Whole grain mustard

1 tsp

Iceberg lettuce

¼ leaf

Tomato(es)

1 medium, thickly sliced

Avocado

½ medium

Red onion

¼ medium, finely sliced

Alfalfa sprouts

2 tbs

Vegan mayonnaise

1½ tsp

Instructions

In a shallow dish combine sugar, paprika, soy sauce and mix well. Add tempeh and toss to coat. Stand 20 minutes to marinate.

Heat a non-stick frying pan over medium-high heat. Cook tempeh on each side for 2-3 minutes or until lightly browned.

Top two slices of bread with mustard, top with lettuce, tomato, avocado, tempeh, onion and sprouts. Spread bread tops with mayonnaise and sandwich
