Ingredients

Lean beef mince, raw

400 g

Dried oregano

1 tsp

Ground cumin

1 tsp

Red onion

1 small, finely chopped

Egg(s)

4 medium

Multigrain bread roll

4 medium, split

Cos lettuce

50 g

Tomato(es)

2 small, thinly sliced

Beetroot, canned in brine, drained

4 slice(s)

Barbecue sauce

2 tbs

Oil spray

2 x 3 second spray(s)

Instructions

  1. Combine mince, oregano and cumin in a medium bowl. Mix well and shape mixture into four 2cm-thick patties.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook onion, stirring, for 5–7 minutes or until golden. Transfer onion to a small bowl and cover to keep warm. Wipe pan with paper towel and cook patties for 3–4 minutes each side or until cooked through. Transfer to a plate. Cover to keep warm.
  3. Preheat grill. Wipe pan with paper towel and fry eggs for 2–3 minutes or until cooked to your liking. Meanwhile, toast cut side of rolls under preheated grill. Top roll bases with lettuce, tomato, beetroot, patties, eggs, onion and sauce. Season with salt and freshly ground black pepper. Serve with remaining roll tops.
