Yummy Thai-style fried rice with pineapple, capsicum, and plenty of fresh coriander.

Ingredients

Peanut oil

1 tbs

Green shallot(s)

4 individual, thinly sliced

Garlic

2 clove(s), crushed

Cooked brown rice

3 cup(s), (microwave packet)

Soy sauce

1½ tbs

Fish sauce

1 tbs

Lime juice

1 tbs

Tomato(es)

1 medium, diced

Pineapple

500 g, peeled, cored, cut into 1cm cubes

Red capsicum

1 small, thinly sliced

Snow peas

100 g

Fresh coriander

cup(s)

Instructions

  1. Heat oil in a wok over high heat. Stir-fry the shallots and garlic for 1 minute. Add the rice, soy sauce, fish sauce and lime juice, and stir-fry until heated through. Add the tomato, pineapple, capsicum, snowpeas and half the coriander, and stir-fry until heated through.
  2. Serve sprinkled with the remaining coriander leaves.

Notes

SERVING SUGGESTION: Steamed Asian greens. TIP: For rice ready to go, cook it the day before or use a packet of microwaveable rice. 1 cup of dry brown rice makes about 3 cups.
