Strawberry skewers with orange and balsamic syrup
A splash of balsamic vinegar makes strawberries taste even sweeter.
No added sugar orange juice
½ cup(s), (125ml)
¼ cup(s), (60ml)
Icing sugar mixture
99% fat-free, plain Greek yoghurt, unsweetened
1 cup(s), (240g)
- Heat a barbecue or chargrill on high. Thread the strawberries onto 8 small skewers.
- Place the orange juice, vinegar and sugar in a small saucepan over medium heat. Cook, stirring, for 1 minute or until the sugar dissolves. Increase heat to medium-high and simmer for 8-10 minutes or until syrupy and the mixture is reduced to 1/3 cup (80ml).
- Meanwhile, grill the strawberries, turning, for 3-4 minutes, or until lightly charred and starting to soften. Transfer to a plate and drizzle with the syrup. Serve with the yoghurt and mint.
