Strawberry lamington cones
Kiwifruit, raspberries, mango and melon would also taste great in these cones.
40 g, chopped
4 individual, (4 x 4g)
200 g, quartered
Low fat, no added sugar ice cream
160 g, raspberry and vanilla flavour
Shredded or desiccated coconut
- Place chocolate in a microwave-safe bowl. Microwave on High (100%) in 20-second bursts, stirring after each burst, until smooth and melted.
- Fill cones with strawberries and top with ice-cream.
- Drizzle chocolate over ice-cream and quickly sprinkle with coconut before chocolate sets. Serve.
TIP: You can use any flavour reduced-fat and reduced-sugar ice-cream, and swap strawberries for blueberries and dark chocolate for white chocolate.
