Strawberry eton mess
We’ve reimagined this dessert classic with cottage cheese to keep the luscious, fruity texture which is sure to be a hit.
100 g, sliced
97% fat-free cottage cheese
⅓ cup(s), (80g)
Vanilla bean paste
10 g, (5 mini meringues), chopped
- Combine the strawberry and sugar in a small bowl. Set aside for 10 minutes to stand or until the mixture is syrupy. Meanwhile, whisk the cottage cheese and vanilla in a small bowl until well combined. Stir through the meringue.
- Layer half the cottage cheese and strawberry mixtures in a serving glass. Repeat with the remaining cottage cheese and strawberry mixtures.
