Ingredients

Cherry tomatoes

250 g, halved

Avocado

½ medium, diced

Red onion

½ small, finely chopped

Fresh coriander

¼ cup(s), chopped

Fresh green chilli

1 whole, deseeded, finely chopped

Apple cider vinegar

2 tbs

Lean beef rump steak

400 g, (buy 500g), fat trimmed

Dried oregano

1 tsp

Garlic

2 clove(s), peeled, halved

Wholemeal bread

4 slice(s), (4 x 35g slices), toasted

Rocket

60 g, baby leaves

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine tomato, avocado, onion, coriander, chilli and vinegar in a medium bowl to make a salsa. Season with salt and pepper.
  2. Sprinkle steak with oregano and season with salt and pepper. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook steak for 2-3 minutes each side or until cooked to your liking. Transfer to a plate. Cover steak with foil and set aside to rest for 5 minutes before thinly slicing.
  3. Rub cut side of garlic over one side of each slice of toasted bread. Top bread with rocket, steak and salsa to serve.
