Brussels sprouts in a tasty form? Yes please! Shredded with lots of fresh herbs, dried berries and hazelnuts and a spiced orange dressing.

Ingredients

Brussels sprouts

800 g, trimmed, shredded

fresh chives

2 tbs, chopped

fresh flat-leaf parsley

2 tbs, chopped

dried mixed berries

cup(s), (45g), coarsely chopped

orange juice

2 tbs

olive oil

1½ tbs

red wine vinegar

1 tbs

ground cumin

1 tsp

ground coriander

1 tsp

hazelnuts

cup(s), coarsely chopped, toasted

Instructions

  1. Combine sprouts, chives, parsley and berries in a large bowl.
  2. Whisk orange juice, oil, vinegar, cumin and coriander in a small bowl. Add to salad and gently toss to combine.
  3. Place salad on a serving platter and sprinkle with hazelnut.

Notes

TIP: You can buy mixed dried berries from the supermarket in the self-serve dried fruit and nut section. It contains dried cranberries, cherries and goji berries. If unavailable you can use dried cranberries, currants or raisins.
