Ingredients

asparagus

5 individual, spears, thinly sliced lengthways

carrot(s)

1 medium, thinly sliced lengthways

spring onion(s)

1 individual, quartered, stem thinly sliced

fresh lemon rind

½ tsp, finely grated

egg(s)

1 medium

Instructions

  1. Remove plates from the WW Steamer. Place asparagus,carrot, onion and rind in steamer with 1 tablespoon of water. Season with salt and pepper. Close steamer and microwave on High (100%) for 4 minutes.
  2. Place silicone board with handles on top of vegetables and place egg board compartment on top. Break egg into egg board. Close steamer and microwave on High (100%) for 1 minute 50 seconds or until egg white is set and yolk is still runny. Serve vegetables topped with egg.

Notes

SERVING SUGGESTION: Add 1 teaspoon dukkah (contains nuts) sprinkled over egg to serve. TIPS: The WW Steamer is available for purchase at the WW Online Shop (ww.com/au/shop). Swap asparagus for snowpeas.
