Spinach, feta and walnut stuffing

Need a stuffing for your roast chicken or turkey? Try this spinach, feta and toasted walnut for two great reasons. It’s super easy to make and it’s super tasty.
1 small, finely chopped
2 clove(s), crushed
Baby spinach leaves
1¾ cup(s), sourdough
¼ cup(s), lightly toasted
Reduced fat feta cheese
- Heat oil in a large non-stick frying pan over medium heat. Cook onion and garlic, stirring, for 5 minutes or until softened.
- Add spinach and lemon juice and cook, stirring, for 2 minutes or until spinach wilts. Stir in breadcrumbs and walnuts. Cool for 5 minutes.
- Stir in feta. Season with salt and pepper. Refrigerate until required.
TIP: 1 quantity will make enough stuffing for 1 x 3.2kg turkey or 2 x 1.6kg chickens.
