Ingredients
Baby spinach
1 cup(s)
Egg(s)
2 large
Garlic powder or flakes
⅛ tsp
Onion powder
1⅛ tsp
Oil spray
1 x 3 second spray(s)
Instructions
1
Process spinach, eggs, garlic powder, onion powder, and pinch of salt in a blender until completely smooth.
2
Lightly spray a medium nonstick frying pan with oil and heat over medium heat for 3 minutes. Pour in half the egg mixture. Gently tilt the pan to swirl the egg, forming a thin, even layer. Cook for 1-2 minutes, until edges are cooked and wrap easily releases from the pan. Using a thin spatula, carefully turn the wrap over and cook on the other side for a further 1-2 minutes, until bottom is golden brown. Transfer to a cutting board to cool.
3
Repeat with remaining egg mixture, lightly spraying with more oil in between. Once cooled, use wraps immediately, or to store, wrap in baking paper and place in a resealable bag and refrigerate for up to 3 days.
