Ingredients
97% fat-free cottage cheese
250 g
Brown rice microwave packet
250 g
Green shallot(s)
6 individual, finely chopped
Garlic
2 clove(s), crushed
Silverbeet
750 g, (buy 1kg, trimmed), coarsely shredded
Fresh dill
2 tbs, or mint, finely chopped
Lemon(s)
1 medium, cut into wedges, to serve
Egg(s)
2 medium
Reduced fat feta cheese
180 g, crumbled
Instructions

Preheat oven to 220°C. Lightly spray a 16cm x 26cm (base measurement) slice tin with oil. Line the base and 2 long sides with baking paper, allowing 2cm to overhang. Heat rice following packet instructions. Cool slightly. Lightly beat 1 egg in a medium bowl. Stir in rice until well combined. Spread rice mixture over the base of the prepared tin.

Lightly spray a large non-stick frying pan with oil. Cook the shallot and garlic, stirring, for 2 minutes or until softened. Add the silverbeet and cook, stirring, for 2 minutes or until wilted. Transfer to a large bowl. Add the cottage cheese, feta, dill and remaining egg and mix well. Season and spread over the rice.

Bake for 15-20 minutes or until set. Cut into squares. Serve with lemon wedges.
