Spicy stir-fried beef and broccoli with carrot noodles

Get inspired with this healthy and easy beef stir-fry that will increase your vegie intake with colourful carrot noodles.

Ingredients

Broccolini

200 g, halved crossways

Red onion

1 medium, thinly sliced

Garlic

2 clove(s), thinly sliced

Beef sirloin steak, raw

360 g, (Buy 2x225g) fat trimmed, thinly sliced

Sesame oil

3 tsp

Soy sauce

3 tsp

Honey

3 tsp

Chilli sauce

2 tsp, hot Sriracha variety

Carrot(s)

500 g, spiralised into noodles

Unsalted roasted cashew nuts

30 g, unsalted, roughly chopped

Fresh coriander

2 tbs, chopped

Lime(s)

1 medium, cut in wedges to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Boil, steam or microwave broccolini until just tender. Drain and set aside
  2. Lightly spray a wok with oil and heat over medium heat. Stir-fry onion and garlic for 6-8 minutes or until soft. Increase heat to high. Add steaks and stir-fry for 2 minutes or until browned. Reduce heat to medium. Add broccolini, sesame oil, soy sauce, honey and sriracha hot chilli sauce and stir-fry for 1 minute or until heated through.
  3. Meanwhile, place carrots in a saucepan with 100ml water. Cook over medium heat for 3-4 minutes until water has evaporated and ‘noodles’ are tender, but not too soggy. Add more water if needed.
  4. Serve noodles with stir-fry, sprinkled with cashews, coriander and lime wedges.
