Spicy roast capsicum pesto
You’ll be amazed how easy it is to whip up a gourmet pasta at home. Simply throw your ingredients in a food processor for a fast, fabulous sauce to stir through
2 clove(s), quartered
Grated parmesan cheese
¼ cup(s), finely grated
Dried chilli flakes
1 x 3 second spray(s)
- Preheat grill on high. Place capsicums, skin-side up, on a baking tray and lightly spray with oil. Grill for 5–8 minutes or until skin is black and blistered. Transfer to a snap-lock bag. Seal and set aside for 5 minutes. Peel and discard skin.
- Place capsicum, tomatoes, almonds, garlic, parmesan cheese, dried chilli flakes, lemon juice and olive oil in a food processor. Process until smooth. Serve tossed with pasta cooked following packet instructions or until tender.
