Spicy pork patties with mango and corn salsa

Pork and quinoa patties served with a mango, corn and coriander salsa for a burst of freshness.


Ingredients
Quinoa
½ cup(s), (100g)
Olive oil
1 tbs
Green shallot(s)
3 individual, thinly sliced
Garlic
2 clove(s), crushed
Fresh red chilli
2 tsp, finely chopped, finely chopped
Lean pork mince
400 g
Mango
1 medium, finely chopped
Red capsicum
1 medium, finely chopped
Canned corn kernels, rinsed and drained
125 g
Lime juice
1 tbs
Fresh coriander
2 tbs, chopped
Lebanese cucumber
1 medium, sliced
Snow pea sprouts
1½ cup(s), (75g)
Butter lettuce
32 g, 8 leaves
Instructions

Place quinoa and 1 cup (250ml) water in a medium saucepan. Bring to the boil. Reduce heat and simmer, covered, for 10 minutes or until water has absorbed and quinoa id tender. Transfer to a bowl and set aside for 5 minutes to cool.

Meanwhile, heat 1 teaspoon of oil in a non-stick frying pan over medium-high heat. Cook the shallot, garlic and chilli, stirring, for 1 minute. Transfer to a bowl and set aside to cool slightly. Wipe pan clean. Add the pork and half the quinoa to the shallot mixture. Season with pepper and stir to combine. Shape mixture into 8 patties.

Spread remaining quinoa over a plate. Press patties into quinoa to coat. Heat remaining oil in pan over medium heat. Cook patties for 2-3 minutes each side or until cooked through.

Combine the mango, capsicum, corn, juice and coriander in a small bowl. Combine cucumber, sprouts and remaining chilli in a small bowl. Top lettuce with pork patties and salsa and serve with cumber salad.
