Spicy pork and quinoa stir fry
Bring this super easy stir-fry to life with fresh coriander and a drizzle of fresh lime.
Lean pork mince
Red curry paste
Quick cup, brown rice and quinoa
Mixed salad leaves
300 g, superfood stir-fry mix
¼ cup(s), leaves
- Heat 2 tsp olive oil in a large wok over high heat. Stir-fry pork mince, breaking up any lumps, for 2-3 minutes or until browned. Add curry paste and stir-fry for 1 minute or until fragrant. Add Superfood Stir-Fry Mix. Stir-fry for 2 minutes or until tender.
- Meanwhile, microwave quinoa and brown rice following packet instructions.
- Add rice and lime juice to wok and stir-fry for 1 minute or until hot. Sprinkle with coriander leaves.
TIP: Superfood Stir-Fry Mix is a combination of kale, wombok, broccoli and cabbage. Look for it in the fruit and veg section of the supermarket.
