Add some extra spice to this tropical Saxbys Ginger Beer inspired mocktail with a little fresh ginger and peppercorns. Unexpected yes, but an amazing combination with sweet pineapple and fresh mint.

Ingredients

fresh ginger

1 tbs, 2cm piece

fresh mint

cup(s)

peppercorn

½ tsp, 20

pineapple

500 g, (1/2 a pineapple) peeled, cored, finely chopped

Saxbys, Soft Drink, Diet, Pineapple

660 ml

Instructions

  1. Grate ginger and squeeze flesh to extract 1 tsp juice. Place juice, mint leaves, peppercorns and half the pineapple in a large plastic jug. Using a rolling pin, crush pineapple mixture to combine flavours.
  2. Divide crushed mixture between 4 glasses. Add crushed ice and remaining pineapple. Pour over diet pineapple. Serve with extra mint sprigs.
