The beauty of burritos is you can put everything on the table and then let the family serve themselves.

Ingredients

Tortilla

200 g, (4 large)

Low-fat natural yoghurt

120 g

Lean lamb mince

400 g

Olive oil

3 tsp

Brown onion

1 small, finely chopped

Garlic

2 clove(s), crushed

Reduced-salt taco seasoning mix

2 tbs

Fresh coriander

2 tbs, finely chopped, plus extra to garnish

Fresh mint

2 tbs, finely chopped

Lebanese cucumber

1 medium, chopped

Tomato(es)

2 small, chopped

Baby spinach leaves

Instructions

  1. Heat oil in a large frying pan over medium-high heat. Cook onion and garlic, stirring, for 3–4 minutes or until soft. Add lamb and cook, stirring, for 3 minutes or until lightly browned.
  2. Add taco seasoning and ½ cup (125ml) water. Cook, stirring, for 3–5 minutes or until thickened. Remove from heat and stir in chopped coriander.
  3. Combine yogurt and mint in a small bowl. Heat tortillas in microwave following packet instructions. Divide lamb mixture among tortillas and top with cucumber, tomato, spinach, extra coriander leaves and mint yogurt. Roll up and serve.
