Spiced pumpkin mash
Swap mash potato for pumpkin in this cinnamon and lemon zest spiced mash.
1000 g, (1kg), peeled, deseeded, coarsely chopped
Fresh lemon rind
1 tsp, finely grated
½ tsp, (large pinch)
- Cook pumpkin in a large saucepan of boiling water for 10-15 minutes or until tender. Drain well. Return to saucepan. Mash well.
- Stir in lemon rind and cinnamon. Season with salt and pepper.
TIP: Be sure to drain the cooked pumpkin well so the mash isn’t too wet and holds its shape.
