Spiced plum quesadillas

Ingredients
Corn tortilla
156 g, (6x26g)
Low-fat ricotta cheese
⅓ cup(s), (80g) smooth
Fresh lemon rind
1 tbs
Ground cinnamon
1 tsp
Canned plums in natural juice, drained
190 g, destoned, tinly sliced
Maple syrup
2 tsp
Instructions

Spread half the tortillas with ricotta. Sprinkle with rind and half the cinnamon, then top with plum. Sandwich with remaining tortillas.

Lightly spray a small non-stick frying pan with oil and heat over medium-high heat. Cook 1 quesadilla for 1–2 minutes each side or until golden and warmed through. Transfer to a plate and cover to keep warm. Repeat with remaining quesadillas.

Cut quesadillas into quarters. Drizzle with maple syrup and sprinkle with remaining cinnamon and extra rind to serve.
