Spiced plum quesadillas

Ingredients

Corn tortilla

156 g, (6x26g)

Low-fat ricotta cheese

cup(s), (80g) smooth

Fresh lemon rind

1 tbs

Ground cinnamon

1 tsp

Canned plums in natural juice, drained

190 g, destoned, tinly sliced

Maple syrup

2 tsp

Instructions

  1. Spread half the tortillas with ricotta. Sprinkle with rind and half the cinnamon, then top with plum. Sandwich with remaining tortillas.
  2. Lightly spray a small non-stick frying pan with oil and heat over medium-high heat. Cook 1 quesadilla for 1–2 minutes each side or until golden and warmed through. Transfer to a plate and cover to keep warm. Repeat with remaining quesadillas.
  3. Cut quesadillas into quarters. Drizzle with maple syrup and sprinkle with remaining cinnamon and extra rind to serve.

Notes

TIPS: You can also cook quesadillas in a preheated sandwich press until golden and warmed through. You can use canned apricots or peaches instead of plums.
