Spiced Brussels sprouts with yoghurt drizzle
750 g, halved
Dried chilli flakes
99% fat-free plain yoghurt
¾ cup(s), (180g)
Fresh lemon rind
1 tbs, finely grated
½ cup(s), sprigs
- Boil, steam or microwave sprouts until tender. Drain.
- Heat oil in a large frying pan over medium heat. Cook sprouts and combined paprika, cumin, ground coriander, chilli and turmeric, stirring, for 2 minutes or until fragrant. Transfer to a serving dish.
- Combine yoghurt, rind and juice in a small bowl.
- Drizzle sprouts with yoghurt mixture and top with fresh coriander.
