Spice roasted carrots with honey, garlic and thyme

Multi-coloured baby carrots look cute enough on their own roast them with honey, garlic, thyme, sesame seeds and coriander seeds to turn up the flavour.


Ingredients
Honey
1½ tbs
Olive oil
1 tbs
Baby carrot
32 individual, 3 bunches, multicoloured, halved if large
Garlic
8 clove(s), unpeeled
Fresh thyme
1 tbs
Sesame seeds
2 tsp
Ground coriander
2 tsp, corainder seeds, crushed
Instructions

Preheat oven to 200°C. Line a large baking tray with baking paper. Combine honey and olive oil in a large bowl. Add carrots and toss to coat.

Place carrots and garlic on prepared tray and sprinkle with thyme, sesame seeds and coriander seeds. Season with salt and pepper. Bake for 25-30 minutes or until golden and tender.
