Spaghetti calamari

A restaurant favourite that’s super simple to make at home in just 30 minutes.


Ingredients
Olive oil
2 tsp
Calamari or squid, raw
600 g, cleaned, cut into rings
Brown onion
1 large, finely chopped
Fresh red chilli
1 whole, long, deseeded, finely chopped
Garlic
2 clove(s), crushed
Dry-style white wine
100 ml
Tomato passata
700 g
Dry pasta
240 g, spaghetti
Caster sugar
¼ tsp
Grated parmesan cheese
2 tbs
Fresh basil
2 tbs, chopped
Instructions

Heat oil in a large saucepan over high heat. Cook squid rings, stirring, for 2 minutes or until light golden. Season with salt and pepper. Transfer to a plate. Add onion, chilli and garlic to pan and cook, stirring, for 2-3 minutes or until softened. Add wine and simmer for 1 minute. Add passata and bring to the boil. Reduce heat and simmer, uncovered, for 10 minutes.

Meanwhile, cook pasta in a large saucepan of boiling salted water, following packet instructions. Drain. Add pasta and reserved squid rings to tomato mixture and cook for for 1-2 minutes or until heated through. Season with salt, pepper and pinch of sugar. Serve sprinkled with parmesan and basil.
