Dive into a spectacular Indian feast with this fragrant side dish.

Ingredients

Vegetable oil

1 tbs

Mustard seeds

1 tbs

Brown onion

1 medium, finely chopped

Fresh bay leaf

10 whole, (1/4 cup) curry leaves

Fresh green chilli

½ whole, deseeded, finely chopped

Green string beans

750 g, trimmed, cut into 2cm pieces

Coconut, flesh

50 g, grated

Lime juice

2 tsp

Instructions

  1. Heat the oil in a large saucepan over medium heat. Cook the mustard seeds, covered, for 1-2 minutes or until they have popped. add the onion, curry leaves and chilli, and cook, stirring, for 5 minutes or until onion softens. Add the beans and cook, covered, for 8 minutes or until tender. Stir through the coconut and lime juice and season with salt and pepper.
